Tuscany is in anyone’s bucket list, no one can argue with that. While traveling in Italy can be quite challenging for vegans, the enchanting Bed and Breakfast Locanda degli Aromi, will make the happiness of vegan couples looking to marry or honeymooning under the Tuscan sun. Magically situated on the peaceful hills of Florence, the Locanda is surrounded by nature and enriched by breath-taking views of the capital of the Renaissance.

I spoke with the Locanda’s owner, Cinzia Re, who previously owned and run two vegan restaurants in Florence, curious to learn how she found this paradise so close to the fast paced city life.  

Cinzia, how did you find your way into veganism? 

I approached veganism because I felt the need to do something more for nature and the environment, animals included. I started reading and learning more about it the choice to switch to the vegan philosophy was immediate! Furthermore, I firmly believe, and it is widely documented, that all creatures, human and non-human, constantly produce energy. Imagine how many negative energies can emanate from creatures that know they are going to die, in a row, one behind the other, listening to the harrowing screams of those who precede them… Negative energies and violence hurt the world. The world needs peace, love and care.

Was this lifestyle change what inspired your love for vegan cooking?

I’ve always enjoyed cooking, and being curious by nature I’m particularly interested in unique ingredients. With vegan cuisine I found a parallel world, I reinvented everything with love and passion, discovering new flavors and aromas.

Your passion for cooking lead you closer to nature… and you sought a place to combine these two worlds.

Yes! After designing, opening and managing two vegan restaurants, I felt the strong need to get back in touch with nature, surrounded by trees and green spaces, plants and animals. I sold the restaurants and found a house in Impruneta, which I used in part as a Bed and Breakfast. Then I wanted to return living near my city in the Florentine countryside, always maintaining my beloved B&B Locanda degli Aromi. I live in the countryside but from here I see the whole city and I am 5 km from the Duomo!

 

What kind of experience do you offer to the Locanda degli Aromi’s guests?

Those who stay here think they have arrived in paradise! A quiet place, surrounded by greenery, with attention to details and comfortable, offering spectacular views and sunsets overlooking Florence. La Locanda degli Aromi is also totally vegan, which means that no animal derivatives are used, neither in the food nor in the rooms. It is an ideal place for couples, who can also have dinner or lunch.  Coming soon, a hot tub outside with heated water, to enjoy the panorama immersed in the pool 🙂 My kitchen is very traditional, I love Tuscan flavors, revisited in a vegan style!

 

I hear you can also host weddings at the Locanda!

Absolutely! In addition to the B&B, I organize vegan and gluten-free cooking classes.  Being an event planner I can organize small weddings here at the Locanda, but also great weddings elsewhere!

What are the perks of the Locanda for a vegan couple on their honeymoon?

We offer super romantic dinners, outdoor Jacuzzi, vegan cooking classes, and wine tours starting right from the hotel if requested: we collaborate with a Vegan Tour Operator, who happens to be my next door neighbor!

Sounds dreamy indeed! You’re a woman of great passion and vivacity. Any other projects ahead?

All my energies are focused on the Locanda right now. We’ve just built a synergic spiral of aromatic plants. Soon we will make a vegetable garden, in order to cook with vegetables from farm to table! I would also like to build a quiet reading room at the Locanda’s greenhouse; one small table immersed in a small winter garden. In the future I would like to start an association that will be called Biocentric, where we will discuss vegan and other topics, like the world of aromas (a subject I am passionate about), communication and psychophysical well-being.
